IN THE KITCHEN: FRESH BAKED TORTILLA CHIPS


Last night I had a major craving for chips and guacamole. Lucky for me I had everything except the tortilla chips. Thankfully I had two whole-wheat tortillas, so I decided to make my own tortilla chips. They are super easy to make and a lot healthier than store bought tortilla chips. I also improvised with my main dish; since I was sacrificing my tortillas I couldn’t make my shrimp burrito. So I decided to serve the burrito fixings over a fresh cilantro rice, so good! I am a big fan of adding fresh herbs to rice; it just kicks it up a notch.
FRESH BAKED TORTILLA CHIPS
- Whole-wheat tortillas
- olive oil
- salt
Preheat oven to 350. Using a knife or pizza cutter, cut the tortillas into strips then cut them in half. Place tortilla strips on a baking sheet, drizzle with olive oil and salt. Toss to coat.
Place in oven and bake for 20-25 minutes, shake the tray once in awhile so they don’t burn. Watch them periodically to make sure they don’t burn.
